Mockmill Origin

On his birthday in 1975, Wolfgang Mock received an unassuming gift that would completely change the course of his life.

For his birthday, a good friend gave him a loaf of fresh home-baked bread. As he ate it, Wolfgang realized that it was the best bread he had ever tasted. It was so good that it forced him to reflect on what could have made this bread so much better than the bread he was used to eating.

He asked his friend how he had made such delicious bread and after some back and forth, what became obvious was that the major contributing factor was the big, heavy, hand-cranked grain mill his friend had bolted to a bench and the fact that he had freshly milled the flour for the gift loaf just before making the dough.

Thus began a period of learning to bake bread and a weekly pilgrimage to his friend’s place to laboriously mill grain berries into fresh whole grain flour. After a while at this, Wolfgang decided to get his own mill, and looking for some relief from the hard work of hand-cranking, decided on an electric one.

Very quickly he became dissatisfied with the shortcomings of his new electric mill. It felt flimsy. The stones spun too fast. And the air that was used to cool the motor, after it became heated in that process, was then also used to blow the flour into a capture vessel, thus over-heating and over-oxidizing the flour.

And by this time, beyond simply wanting fresh flour for his own home-baked bread, Wolfgang had become fully convinced that access to freshly milled flour is a basic need for every kitchen. So with the fervor of a zealot, he set himself the task of creating high quality, convenient and affordable home grain mills that would make this possible.

Today we continue to deliver on the quest that Wolfgang began in the mid-1970’s.

Sourcing custom innovative precision components from manufacturers throughout Europe, Wolfgang and our engineering team have designed and refined a line of countertop home and professional grain mills that it is our goal to put into every kitchen and small-scale artisan bakery on earth.

We passionately believe that baking and cooking with fresh-milled, organic whole grains is the best thing you can do in your kitchen for both flavor and nutrition and it is our mission to make that convenient and affordable for everyone.

Mockmill USA

Beginning in 2019 Wolfgang Mock GmbH formalized a long-standing relationship with US company Breadtopia, Inc.

Our partnership with Breadtopia makes them the exclusive North American distributor for Mockmill. This means that they handle our wholesale distribution, retail fulfillment, customer service, and warranty service for all Mockmills sold in North America. Since 2006, Breadtopia has been a key resource in the artisan bread movement in America. In addition to providing a large and freely available library of tutorials, recipes, and baking guides, they sell home and professional baking equipment and are one of the largest retailers of sustainably sourced, organic, heirloom, ancient, and specialty grains in the USA.
